2tsLoose black tea (pref Indian)
2 Cardamon pods
1/4tsFennel seeds
1/2cMilk
  Sugar to taste (opt)

Combine the water, tea, cardamon, and fennel seeds in a large saucepan and simmer over low heat for 2-3 min. Add the milk and 1-2 min later or when the mixture returns to a simmer, strain the tea into 2 cups.Add sugar, if desired.

Variation: to make Chai II without milk, combine the water, tea, cardamon, and fennel seeds in a large saucepan and simmer over low heat for 2-3 min. Strain the tea into 2 cups.
